You can buy stick on sheets of tiles at the Dollarama - color is limited - have only seen shades of grey and shades of brown. Stick them on then remove later. I did this and intended it to be temporary but liked it so much it is still there. Home Depot /Walmart also have some but they cost more - still inexpensive and more color choice.

What is there now? Looks like painted wall board...If you go to a restore type salvage place they often have stick on sheets of 'plastic' tiles in 12"x12" sheets. They peel off easy when you want to redo them. If you are just trying to cover up and protect the wall you can get peel an stick water proof paper at many of the dollar stores. I think it use to be called mac-tac. I've used this paper to cover cake boards and they wipe down nicely (I put a layer of parchment in between so no food contact) and can be re used. If you go this way, you can change up the look anytime you want! I've bought brick wall type paper, faux wood type paper and many fun designs. They even have peel and stick plastic mirror sheets at the dollar store, other than wiping them down allot, they could be a fun inexpensive alternative too! Another cool idea I've seen done is, find an awesome photo that will fit in the space and an old window with at least 4 panes, fit the photo/poster etc on the back with double stick tape and hang your window with picture hangers from under the top set of cupboards...this way you have something pretty to look at -maybe a favourite vacation spot? You don't have to do the whole area either. If you frame in the area just above the sink you can leave the side sections the way they are.
When my mom was in senior housing, she had a sink like this...no window. She mounted a nice piece of artwork above the sink. It gave her something to look at while doing dishes. She used an antique fruit print, but a nice landscape would be good. I'd use acrylic instead of glass. Easy to mount, easy to remove when you are ready for something more permanent. Post a photo of what you decide to do. :-)
You could mount a Large Plastic type Tray on the wall using Picture hooks and clips at bottom or even use Sticky Pads. Thereby if you tire of it it would be cheap to replace. Country View - Chickens etc..................
in my kitchen, I hung a piece of white metal pegboard and I use it for measuring cups, spoons, etc., but you could hang decorative things too. How about adding a shelf halfway down for some herbs or other storage
Get a blank white canvas at walmart and hand write a favorite family recipe with a colored paint pen. Cheap, farmhouse and you can hang elsewhere when you do the tile.
