Paint the countertops gray and seal well. Buy backsplash tiles at the dollar stores for as low as $1. They look very much like the expensive tiles. You grout them the same. Polish with a cloth afterwards. Minimal cost for maximum effect. Bless you 😇
They have regular countertop paint in a few colors at Home Depot . Works great

There are special kits at places like Lowe's and Home Depot made especially for redoing counter tops.
Most home centers sell kits for painting laminate countertops. You can make them look like marble or granite if you like. For the backsplash, add paint, tile, beadboard paneling, or stick -on tiles to change the look.
Just posted above, I covered mine with granite colored contact paper. It lasted for 2 years until I got bored with it and took it off. Never faded, ripped or came unglued. They have so many colors now that look like marble and granite and it's a cheap easy fix. I'll attach the before and after pic again.
