From what I was seeing when my son remodeled my home last year was Granite is going out of style. More people seem to be using quartz. That is what I used and I just love it. I always put a pot holder under any pots I take off the hot stove just as a precaution. Not to burn it. Not sure if it would or not. Was told it would stand all sorts of kitchen abuses.
Granite requires sealing, 2x/year, but is more heat resistant than quartz, and a joy, for baking, because it stays cool when rolling out dough. It is not totally impervious to damage from acids (lemons and tomatoes), nor oils. If you're unwilling to seal (it really takes very little time and effort), get quartz, but use hot pads or cutting boards.
The thinner slabs cost much less, as do many quartz products, which are mixed with resins.
