These countertops are all beautiful but the final question would be the final coating finish and I guess the very best would be epoxy except for the reason that you don't want all the work to turn yellow..
I think the laminate paint kits are what you want. If not, respond and clarify your question.
Hi Jan, I painted my countertops and the paint lasted 10 years until I could afford new ones, here's how I did it.
Lightly sand to rough the countertop up
Go to your paint store, tell them what you are painting, they will pick the proper paint and primer for you, you can even get the primer tinted for a better coverage
Once you have sanded, clean with TSP, then rinse and dry thoroughly,
Apply your primer coat, let it dry according to the instructions
Once the primer coat is dry, apply your paint coat, I would apply 2 or 3 as it will be stronger and thicker
Once your coats dry, you can apply a matte clear coat, either by spry or roll on, keep a small container of it under your sink for touch ups, I had my counters like this for 12 years, until I could afford new ones.
I used a few uncolored glass cutting boards for protection. It held up very well. And only costs you the prices of the materials.

You could use Contact or Tile covers or Ceramic tiles or stick hardwood timber or coins or anything you like to the top and seal it afterwards. Have fun....

If you are looking for a quick and easy way to make your laminate worktop custom, look into contact paper. It smooths right over top, and is surprisingly durable! You can get any finish you want this way, such as marble or rustic wood. Here is a link to all different contact paper made for countertops.
Another option is a countertop paint kit.

Hi! Both Gianni and Rustoleum make kits for this. Some people put epoxy over old countertops, but, I've never done it myself!
