Are you thinking something removable? My first thought is a good glossy paint that would be easy to scrub. I've been really happy with the Behr Premium paint I used in my kitchen.
How about the faux tin ceiling tile that you can get at Lowes Easy to cut and put up and you can leave it white or paint it black

How about a stainless steel backsplash? Or painted tin tiles? Or just paint the wall with the best washable paint you can afford.

Contact paper is a cheap, quick fix that is easy to clean, changeable and can be stylish.
A piece of tin would work and if you don't like the look of tin you could cover it with something that is not flammable.
