I would empty them, take off the doors, they are most likely screwed into the ceiling and to the cabinet next to it. You should be able to see this from inside. I would make a support to put under it as you unscrew the one on the left first or if you can enlist a friend to hold it up. Get your drill out and put an adapter in it to hold the phillips bit and turn it to reverse (the little arrow on the side) unscrew the screws in the side of the cabinet and then the ones in the ceiling. https://www.youtube.com/watch?v=HLyf56m3Gnk
Sharon's right. It is easy. Just get some help or build some support. Make sure you turn the power off to the fan. Since you will have power there after you remove everything some pendant lights would look great. Of course there will be some patching of the bulkhead (soffit).
