Make your choice considering your lifestyle and not fads or trends. Do you have pets or kids? What is in the rest of the house? Do you want easy to clean? All things to consider. The new vinyl products are great and easy to maintain and keep clean. Tile is beaitiful, but consider cleaning and sealing grout periodically. Just research all possibilities then decide.
Depending on your floor base, I agree with Naomie. For a newbie DIY I would go with a laminate. Tile is complicated, costly and takes days. Laminate can go down it a day, depending on the kind you choose and how many cuts you need. Even easier is adhesive laminate. It looks just like tile and you can cut it with scissors!
I've replaced many floors with vinyl tiles. They are self adhesive, cuttable,and you can pull them back up if crooked.
Don't install laminate flooring in your kitchen, it's never recommended. You'll get a year, tops with a wood laminate. COREtec is a waterproof and scratch resistant Vinyl floor covering that is installed very similarly to laminate. It's a floating clickable system, and if there aren't many crazy obstacles, doorways or corners in your kitchen, it's definitely one of the easier materials to install. Plus, there's a style out there for everyone.
