I think it would be fine but make sure you research products that can withstand moisture. there are lots of new products that can withstand high traffic, moisture and pets.
Vinyl flooring is great for the kitchen. It's very retro and there's a ton of different colors to choose from and you can make up your own layout using different colors.
I laid wood-look vinyl in kitchen and whole house and love it. I dropped a cup the other day and it didn't break! Dogs track water and mud in thru utility room, and so easy to clean up! Before this floor I had glue down granite-look vinyl and I loved it too. House flooded so redecorating.
We used vinyl plank flooring in our remodeled kitchen and bathroom. It's a click and lock, as well as water proof. we have 2 German Shepherds, so we have puddles from the water bowl, wet paws from coming in from the snow--extra easy cleanup, no scratch, and looks better than the real thing!! It's textured, like aged sawcut lumber, perfect for a rustic look!
Here is a photo that I just took of the floor.
