i would think white or very light gray
You could add a bold 4th color like true red or burnt orange that can coordinate with all 3 colors - the B&W of the countertop and brown cabinets. Then add accessories that have all 4 colors in it (curtains, dishes, decor items). You need some contrast here to "wake up" the neutrals you now have.
I personally would pick out one of the colors from the top either the white black or one of the shades of grey. This will help accent the top beautifully.

Go with your darkest shade for a dramatic effect - black or dark grey. The bright color is an idea to use only if you never plan to resell the house.
I am just finishing a total kitchen gut and remodel, and my granite counters look almost identical to yours. I did a white subway tile backsplash (and yep -- did it myself!), and I'm really happy with it.
We did subway tile as well with a very similar counter top.

I too agree with one of the light-medium gray tones. You can always add colour through accessories.
