Will it be permanent..... if it is...contact paper, or left over flooring. Or mirror tiles.

Contact paper, is cheap and you can wash it, remove it, replace it if you get tired of the look, etc. I have used it in the past for a variety of needs around areas that would cause water damage. It's a barrier and that's really all you need. Just sayin....

If you want a "true" backsplash (that is something physical) I often use a wide piece of baseboard (wood, not MDF). You can buy baseboard in all sorts of heights up to 12" in any hardware store. Sometimes they even cut the wood for other people and have scraps you can take for free.

Cut it to size, prime and paint it with a semi-gloss washable paint, attach it behind your sink, close to the sink lip, caulk between sink and wood (use paintable caulk!) and give it one more coat of paint. It really looks nice and can take a beating. I used this method in my kids' bathrooms when they were young and it looked pretty and took a lot of abuse!

I just did a backsplash in my kitchen and used old plastic blinds, the thick woodgrain kind, cut them and installed to look like subway tiles. Super easy and super cheap!

I used brick look wallpaper for the back splash in my kitchen. Then I used peel and stick grout from Amazon.
