If the brick fireplace is a complete wall, floor-to-ceiling wall to wall easiest way to cover it will be to use 1 by 4 furring strips nailed through to the brick. going from wall to wall the same as there would be studs in a wall.. once this is done then you can take sheetrock and completely finish and cover the brick fireplace and make a new wall.
Most people paint the fireplace. A low cost solution.

I would consider drywall rather than paint. It gives a more up-to-date look.
we went with a different choice, picking a beautiful multi-mix of pale beige horizonal 'stone' facing. it still took the crew a lot of prep work to sand off the curved bricks which stuck out over our fireplace opening (a very messy job) and then to install steel mesh grid in cement - before beginning to apply the stones (we'd used a similar product outside). we're very happy with the results. before that we'd covered this enormous red brick 9' x 6' by 3' deep brick eyesore with full length mirroring (which worked for the first go-round and had the effect of making the fireplace column disappear plus bounce light around). a more modern look is using tile or stone, or maybe shiplap light-or-white wood, or even white-washing the brick for the least expensive option.
