How can you change dated recessed kitchen lighting?
So tired of same old and boring recessed florescent tube lighting in my kitchen. Two long rectangular boxes with painted (white) wood trim. Some type of hard plastic obscures the fixture inside. Would like to eliminate altogether. Ceiling is normal height and kitchen is small.

Many stores no longer even sell replacement florescent tubes anymore, since LED lighting has taken the great leap into the new millennium. Switching old light incandescent or florescent fixtures is one of the fastest and cleanest ways to quickly update the look of any room.
LED light fixtures come in two general types- ones that take LED bulbs, and ones that have integrated LED lights inside. The latter are available in flush mount fixtures which take very little ceiling space and are lightweight. The pictures below show the inside of an integrated LED fixture, and some commonly available styles.
Something else to consider when switching to LED lighting, is choosing the intensity (lumens) and degree of warmth/coolness it emits. Pictures below show how different choices can change the perceived colours in a room.
Have you thought about consulting an electrician for options? We had similar lights in a soffit in our kitchen but we got rid of the soffit and therefore we able to install new lights.
We turned ours into a pot rack. Our lots a d pans hang there very nicely.
