How can I organize and display my coffee mug collection?

It would depend on the size of the collection, display or not, how you want them organized. Cup hooks under the cabinet is one option. Shelves on the countertops. A display case.
Do you use them? If so, you want them where they will stay clean.

Replace solid wood panels in your kitchen cabinet with glass. It will keep your collection dust free. Then arrange by height, color, etc. Use a vibrantly colored paint behind the mugs for contrast, or install beadboard or fabric against the back wall.
