I store mine in a basket in my cool, dark pantry.

Depends on how much you buy. I normally less than 5lbs at a time, and store it in the bottom veggie drawer in the fridge. Its cold and dark and it should reduce it from going green.

My home there are no cool dark places especially in summer. No pantry, garage is only semi insulated. Kitchen cabinets are not adequate for my needs. So I only purchase when I know I want them for a meal within a few days. No home should be built without a mudroom and pantry!
