Consider container planting for your area.Use different size pots and fill them with colorful annuals,perennials ,shrubs and trees based on your planting zone.
If you don't want to use separate containers for everything consider raised beds wherever you want them. Enlist willing helpers to help with the parts you are unable to do by yourself. Don't be ashamed to ask for help! You may be surprised how many helpers you can get with the offer of a good meal or a few hours of free babysitting for a night out they haven't had forever.
Agree raised beds. You might join a local rhododendron club for cuttings to start. You might try your local Habitat for Humanity for help, ours here helps low-income home owner projects. You do have to round up someone to do a portion of the sweat equity. I volunteered to paint the interior of a lady's house, and I did pruning and weeding her garden. Our town churches also have groups that go out to elderly and low-income properties to do projects and bring firewood to people.
Have you thought of a Berm, you mound up dirt and plant trees and shrubbery and then place mulch on top, you could do several small ones. Large pots with shrubbery or bushes, could use wash tubs, do not have to use expensive nursery bought pots, get inventive. Google "Berm Ideas Pictures"
