I think training them onto a trellis is a great idea. Keeping them off the ground will allow the squash to grow bigger and make them less susceptible to rot. The flowers will also look very pretty on a trellis. Good luck.
I have grown gourds on a trellis and they are straighter than when they are on the ground. A trellis will also keep the fruits away from more critters. As Robeekay said, the flowers and fruit will be great to look at as they grow.
A trellis is a great idea for the reasons mentiond above. One way to make a quick easy trellis is to get an old wooden ladder and just train your plants on that. It adds a bit of whimsy to your garden and is movable as well. Good luck!
