This is a tough one! Mine have learned from scolding, but it was a long battle and there were even a few sharp squirts from a spray water bottle in the process!
Cats do love to be up off the floor though, so have you considered providing a favorable spot that you don't mind them going? (a favorite spot of one of our cats is above the top kitchen cabinets.)

People have had rapid success by spraying vinegar at the cat when it jumps on counter. Because cats dislike the smell, regularly wiping counters and nearby walls with straight distilled vinegar should cease the behavior.
There are 6 rescue cats in my household. I just told them NO repeatedly. Now I do know they investigate when I am asleep or out of the house occasionally. When I use my "stern" voice they know I mean business.
