You would need to wrap the post with cement board to the height you want. Use a latex modified cement to stick the stone to the cement board. Then use the modified cement as grout. You can use a gallon plastic food storage bag with a corner cut off to apply the grout in the joints. Fill the bag with the cement and squeeze it into the joints. Use a stick to force and smooth the grout. It will look great!
