We bought pre primed tongue and groove boards for ours. We used cove moulding to edge. Be sure to paint it a light color, as it keeps wasp and bees away.

The lightweight lattice/trellis panels might be a nice way to introduce some texture and interest. Maybe paint the existing ceiling a pale blue then add the lattice in white (available at home improvement stores).
