Hi Dawn, I suggest using Citristrip to remove varnish and paint, then sand with fine grit sandpaper and seal the outside with a clear coat of water based poly so it doesn't yellow in the coming years. A light sanding inside will likely bring back that cedar smell which works so well to repel moths. Don't seal the interior ,just leave it natural.
I have an old cedar chest, too. Make sure that you check it carefully, mine is veneered on the outside.
