For the best paint job, start with a masonry block sealer. This is nothing more than a good quality latex primer. When that has dried apply a layer or two of the color of your choice in flat latex paint. This will give a matte-finished look, something like slump stone.

This works well on fireplaces, but not the inserts where there is heat, that will damage the paint. Many people paint their fireplaces and have great results in makeovers on their brick.

You can use flat paint if that is the look you want after painted. I have painted fireplaces in the past and I used a semi-gloss paint and was happy with the look I achieved. The rough surface of brick can absorb lots of paint!
You can thin it 50/50 with water for a whitewash effect.
Hello. I have used flat paint on the exterior face of my indoor brick fireplace and it worked marvelously. The previous homeowner had painted a white stripe as faux molding on the top layers of brick and I wanted to return the brick natural multicolor. The 2 ounce inexpensive craft paint from Apple barrel solved my situation. It was also used to do touch up with paint drips occurred elsewhere from sloppy room wall painting.
Yo can use any sheen of paint you want. It will just give a different look.
It depends on how you want it to look after you are done. If you want it to have some gloss, you can use a semi gloss paint. But if you want it to have more of a matte look, you will want to use a flat paint.
