I’m painting stained oak trim. In order to save money (primer is cheaper) would it be ok to use 2 coats primer, 1 coat latex vs 1 coat primer 2 coats latex? Would the finish be just as nice as long as the stain isn’t bleeding through and the paints are adhering properl

Doesn't matter either way. As long as the final color is what you want and coverage works out.
One thing to keep in mind on this. Usually trim is semi gloss. Primer won't give you that so you might want to use a semi gloss sealer over the top to give that shine.
