Yes, lightly and yes. Be sure to apply a clear finish coat. Chalk paint isn't very durable without it.

...Oh.... and YES! take the doors off. Painting over hinges (unless you're going for a shabby look) is tacky --- and indicative of an amateur job.
Any chalk paint will work. But I would prime with a bonding primer like BIN Shellac Based primer. Make sure to wipe them down really well first and take all the doors and hardware off. If you use chalk paint, you need to use a topcoat like Varathane's Polyurethane.
