I like a semi-gloss for the trim. Gives a nice contrast to flat or matte wall paint.
Satin goes on almost like flat. Use gloss - I like high-gloss but that's my personal preference. Gloss offers more protection for baseboards from every day "bumps". And yes, you need to sand first.
I like satin.
If they are currently stained, I'd sand lightly first, then prime before adding the paint. I like a semi-gloss for trim but a gloss would also look good.
Hello Cindy! I am attaching a link for you to click on that gives the pros and cons to the different paint finishes for crown molding. This guide also talks about whether sanding is required or not:

I would use at least a semi-gloss. I have two doors quite close to each other and the other day I was admiring them. . . they had been painted about 40 years ago with oil semi-gloss paint and they look perfect still. Can't buy paint like that anymore.
Hi Cindy, I would think you would need to sand every thing down first. You may need to paint on a prina to, depending on the color allready there. You can put dark colors over light, colors, but you can't put light colors over dark. I don't think it matters regarding, the white paint though, as I think it is a matter of personal preferance. If your not sure, nip into your local paint, or hardwear store, before starting, as they will be able to give you more exact advice. Good luck, hope this hepls. Kay Adelaide Australia
choosing finishes is truly personal. You have to remove the stain first.Go with your own sense of style and not every one elses opinion
If it's stained then you need to clean it well, rough it up with some sandpaper, put a good coat of Kilnz primer on there, wait for it to dry, then paint away.
