Leaving food out?

How long before serving, can a cheesecake be made? Night before?

    Hi Carol, Cheesecake will last about a week in the fridge if properly covered. It is best to let it cool completely before serving. So yes, if you made one tonight, it's best tomorrow.

    Agree with Suzette. Also, make sure that the cheesecake is cooled completely out on the counter before you put it into the fridge. If you put it in the fridge too soon when it is still hot, then you risk it getting wet on the surface due to hot moisture still rising.
    Also, do not put on top of the cheesecake any cut fresh fruit, fruit sauce, etc. until just before serving, as it will likely discolour and get soggy.

    I've made mine 2 days before and it's perfect. (Must be refrigerated after coming cooling from oven). If you need a great recipe, I've got one!!!! No Worries!

    I make mine ahead and freeze it ... less stress and the job is out of the way.

    My hubby makes gourmet cheesecakes that takes anywhere up to three days to make. One to make the cookies for the crust, one to make the cheesecakes, one day to cool and then top. The cooking takes hours. We have them in the fridge for quite some time as long as we put wax paper on the cut sides. We also use ganache on the top that keeps it from drying out. If you cover it well you should be able to have it made for a few days before you serve it. Unless you are putting on a ganache type topping I wouldn't decorate until shortly before cutting and serving. Cheesecake freezes read well. If we freeze it before serving, we cut it, put two pieces of waxed paper between each piece before wrapping it up so that it is easy to take it out a piece at a time and not have to thaw the whole thing out.
