I'm going to make pet cover similar to the SureFit products and
think I can wing it well enough but wonder if there are any videos around to help me so I don't have to entirely re-invent the wheel. I plan to make the sofa covers out of denim and plan to make two sides to make them sturdier, make double seams on the edges and probably make ties in a few places. My chairs have wooden arms. Ideally, I'd like to put a liner between the two pieces of denim that would absorb any liquid that might accidentally get on the chairs but I'm not sure what that might be that would be washable. Any ideas, videos or suggestions based on your experience?

I would dissuade you from using denim. Denim is not easy to sew, especially at seam junctions where it gets very thick. Denim frays quickly requiring reinforced or enclosed seam allowances for durability, dries slowly, and shrinks at a faster rate than other fabrics.
As you are planning to 'sandwich' a liner in between the covering layers of denim you may have a problem with the entire pad not laying right due to continued shrinkage after repeated washings.
For a liner, you could use several hospital incontinence bed pads,available at Amazon, if you choose to go with them, wash and dry first before making your project:

As Flipturn stated, denim might not be the cloth of choice, you might consider an alternative, check with the people at Joann's fabric for recommendations.
If you have an old quilt, use that, It is soft and makes a great sofa cover.
Maybe buy one and use it for a pattern then return it?

I would use a ultra suede for fabric its great for pet hair.
I purchased mine on Amazon because it was cheaper than making it myself. I'll see if I can find a pattern for you. OP 88. Also maybe something like this for your lining:
