We've had several RVs and always found they were experts in using nooks and crannies for storage. We use plastic bins to keep things in place. We often found that cupboards can pop open when "careening," so we made wooden slats that thread through and notch around cupboard handles. They stay in place while driving, and easily slide out when stopped.
You can store a lot in an RV, but you must keep in mind that each RV has a carrying capacity that you may not exceed for driving safety. It takes 20% longer to stop a fully loaded RV, so always err on the safe side. On line, you can find the specs for your vehicles if you don't already have them.
In most RVs there are storage places under the beds and seating. Use plastic storage bins to put your things in to keep them out of site and keep them from moving around.
