Mint extract - DYI advice

So I have more mint than I know what to do with in my gardens. I would like to make extract. There seems to be two basic reciepes, one using vodka (grain alcohol), one using olive oil. Has anyone tried either of these methods and what was your result.

    you can use both methods. the one using alcohol makes an extract the one using the oil can be harder but used for body and bath.

    I've never tried making extracts, but peppermint tea makes a great gift.

    my mom used to make mint sauce its just vinegar water and sugar you boil the mint in vinegar water 3/1( ratio 3v 1 water} depending on amount making, moms was gallons. id say if doing cups use about two tablespoons sugar they use it on meat pork roast and lamb instead of mint jelly if you no how you could make jelly too
