Some of the widow ac units have wings that pull out from the side to close the gaps. I have used a pine board cut to fit.

Any hard surface (like the pine Dfm mentioned) is fine. Maybe consider those transparent sheets that looked like stained glass. They're meant to go over windows with just water, but sure you could modify some sort of glue on over the wood. Good luck JGN
Don't forget to prime and paint the boards if you use them. You can also cover the inside with fabric using Modge Podge or a spray adhesive like super 77, then spray with a clear acrylic to finish and protect. You can also make a custom frame out of small pieces of wood, paint sticks, or a picture frame to cover the front of the AC unit. Use the same fabric, or paint a mesh/screen with a complimentary design and put it in your frame, then hang to cover up A.C. unit. The air will come thru mesh if not sprayed to heavily. I've used some variations on these ideas in the past. Good luck but have fun too

If this is a first-floor or accessible window, buy this. One layer on the outside of the window, one layer inside. Be very sure to wipe down the area where the tape is going thoroughly with good old rubbing alcohol first. Cleans and dries fast.

Lastly, some folks recommend this. Cuts easy, insulates, fits into window runners. Likely want to prime/paint for weather resistance or cover exterior with clear vinyl wrap.
