A picture might help in trying to figure out this problem. I don't think I have ever seen attached headboards in a mobile home.
I have a few ideas: 1) Some are slid down over brackets which hold them in place. Try sliding up or down. 2) Perhaps they are glued and/or nailed. Slide a putty knife or other thin bladed object in behind and try to pry it off. Or 3) slide a thin wire behind the edge and saw it back and forth, moving downward slowly to cut any caulk or glue that might be holding the headboard
My guess (it's only a guess without seeing them), is that they are built in place. What actually fastens it to the framing is probably covered by the exterior finish. Prying it off a layer at a time may be the only option. Be prepared to repair the wall if that is the case.
Can you be "friends" with the headboard? ...maybe refinish or cover it? Get creative!
If you can't remove it you can shiplap it!
