First picture! Use a high speed drill bit same size as the rivet. The tip of the bit would be in the indent while chewing thru outside ring of metal. Start drilling slow and slowly speed up as you see the metal being chewed out. once the ring is chewed out the parts should separate. Then just pop the remainder head of the rivet out. It may also fall out on it's own.
It appears to have a ring that is securing the inner piece. You will have to pry around the ring to pop it out. This will take a good deal of hand strength. Be careful not to gouge the wood as you work on it.
If you’re only removing a few rivets, a more accessible method is to use a plain drill bit.
First, if the rivet doesn’t have a discernible center, you’ll have to create a divot, a place for the drill to start, using a hammer and a center punch or narrow nail set.
Next, find a twist drill bit that’s just the next size larger than the rivet’s mandrel.
Insert the bit into the drill, center the bit in the hole, and drill at a slow speed through the center of the rivet’s sleeve. The rivet should fall apart. If it doesn’t, try the next larger-size drill bit. Remember, it’s always a good idea to wear safety glasses when drilling into metal.

– Punch
