    remove the old tile or whatever... replace the dry wall with Hardy Backer (water resistant... used behind tile) then replace with what ever you want... there are some awesome large format tiles out there that you could use in that size area.

    Home improvement stores have simple replacement backsplash panels. We had never done it before and the instructions were simple for us to do. We chose metallic copper molded like tiles, but it as a complete panel. Hope this helps. We got ours at Lowes, but most home improvement stores probably have them.
