Just fix what needs fixing then do the best you can with extra drywall mud to mimic the texture. That's my biggest reason I hate textured walls and ceilings. So glad they don't do that any longer here.

It is hard to match the texture when repairing ceilings and walls. You can try some dry wall mud and various tools to mimic the texture. A brush for stippling, a wide flat drywall spatula for orange peel, or you can buy spray popcorn for the more popcorn effect texture. Do what you can and touch up with the same color paint or repaint. You will notice where the repair are more than others.
