The rear bench seat in my truck has the worn leather with the big circle in the middle like the brown leather sofa that was redone.

No reason why you can't redo the same way as your sofa was done. An alternative is to replace the leather rear seat with new leather. This could be done professionally or by yourself if you have the means to sew leather by machine. You'd carefully remove the leather seat and take it apart at the seams, that way you'll have a pattern to make the new cover. The new leather could probably be found on Amazon or maybe a local store would carry it.
