Use either masking or duct tape to keep from fraying the edge of counter I would apply to both sides and use a sabre saw with a straight edge clamped to count top. Before you remove tape do lightly sand edge. BTW you were not specific which edge, should be same anyway.
You might find it difficult to keep a straight line. I would suggest filling it with a filler and or using a beading or trim of some kind to hide it and at the same time make a feature of it. Once filled could always use a washable Tape or Tile trim....
yeah, that is tough. To understand the basic construction of your counter (if you do not already)... there is a piece of plywood and then a piece of "edging" either glued or glued and nailed up under the edge of the plywood. Then laminate is glued on top of the counter; then down the side piece and finally a piece of trim like what you have; to hide the seam.
Unless you are really really handy this is not something to tackle yourself.
