My granite installers told me to use a Zep product called CleanStone Plus. Available @ Home Depot to maintain and restore lustre.
Hit to restore the granite will depend on thick. If thick you can have the granite sanded and sealed.
If you do anything to smooth out the surface, the best way to avoid future problems (which includes bacteria taking up residence in little holes you can't see OR feel) is to SEAL the surface.
