It is wood and I want to seal it from moisture but be safe around food
Buy an oil specifically formulated for applying to butcher block, like Watco Butcher Block oil - available at big box stores and online retailers. Treat like you would treat a butcher block countertop. Typically you will need to deep clean and reapply the oil one to two times a year, depending on how much wear/tear your countertop takes. You don't want to use polyurethane on wood where you will be preparing/cutting up food.
