How can I restore my bamboo cutting board that got wet?
I accidentally left something wet on my bamboo cutting board and now it has a large dark area in the middle. Is there any way I can restore it?

Natural Cleanser
Because cutting boards come in direct contact with food, you may want to try a natural cleanser first. If your cutting board is moldy, sprinkle a coarse salt, such as sea salt, generously over the board. Cut a fresh lemon in half and use it to work the salt into the surface of the cutting board. The salt will lift tough stains and minor mold out of any cracks, grooves and cuts in the cutting board, and the lemon will leave it smelling fresh.

Here is what the Pioneer Woman says to do: Just sprinkle baking soda on the surface of the cutting board, then work it into the surface stains with a lemon (which also makes the board smell amazing, by the way) or a gentle sponge or wash cloth. Rinse the board and dry it with a towel.

Lemon Juice of Hydrogen Peroxide should help to bleach it out and are both food safe.
I agree with the above remedies of lemon + another cleaning substance. After cleaning, make sure your board is thoroughly dry, then treat it with food grade mineral oil. I prefer to use USP pharmaceutical grade mineral oil because it is easy to obtain at any pharmacy. Rub on a generous amount, allow to soak in, then wipe off excess. If you regularly treat your board this way, it will resist future stains.
To restore a dried-out cutting board, use a sheet of fine sandpaper to re-sand the finish and make the surface smooth again. Clean all the dust and wash the board with hot, soapy water. Allow it to dry completely and then re-coat the bamboo with mineral oil]

Try a lemon half and sea salt, dip the / lemon into the seasalt and scrub with the grain of the wood.
Cover the area with kosher salt, which can draw the stain up and out of the bamboo. Let the salt sit overnight, then rinse the board clean in the morning.
