You could just make it as tall as the highest part of the arch.
I'd say the same as Cindy, make the door as tall as the highest point of the arch and it should look alright! I love barn doors and an arch to a bathroom, I guess I would NOT like! Or square it out and make it look like a normal door, but then you might damage some of the wall, while trying to knock it out!
You get to have both! Unless you don't want to? The barn door can cover the arch, but when you open the door, you get the arch look as well.
Other than that, I would think that the doorway was constructed first as a regular square top and then the arch was added. You may be able to carefully investigate. Then you could just remove the arched part. Check out this website to see how this arch was made...maybe yours is the same...
