We are having new hardwood floors put in our dining and living rooms. Should we put an area rug under the dining room table?

A minimum 8' round, square or octagon. 9' will likely be better.
The rug should extend at least 2' outside the table. So minimally 108" or 9'.
No what is your room dimension size? I would think the bigger the better at least 9 foot.
What will fit in your room? Probably a 9’ diameter rug. Make sure you’ve treated it against spills.
For chairs to slide in & out with ease, you should add 24-30" to each side. That would put you at least with 9'. You can also go with a square rug, same size.

We've always had an 8' round under ours...because a 9' wouldn't fit in the nook. It works and looks great.
I agree that 9' would be a good fit. That way the chairs aren't getting caught up by it.
