Hello. Tile is by far the best material to use for a back splash. It can stand water and last long. Tile has always been around and always will be. It will be the most expensive but worth it. If you have a budget check out discontinued and clearance items at your local hardware store.
Tile is the best value for the money. Also the best wearing and durable.
The longest lasting favorite is White Subway Tile which has been a favorite since it first came out in the early 1900's (And that stylish piece of 1904-history is the subway tile. Originated by designers George C. Heins and Christopher Grant La Farge, this ubiquitous 3-by-6-inchrectangle, first seen in a New York subway station, quickly made its way into kitchens and bathrooms across the country.) Keep in mind that what is so trendy today is tomorrow's list of "what not to do."
So on something as permanent as tile, go with a "standard" and put the glitz in things that can easily to replace...and less costly.
(Use a dark grey or black grout...then spills & stains won't show!)
Tile will probably be the most durable and one of the higher cost options. Wallpaper is a labor intensive choice if you change your mind down the road. Find a few options you like best, and then get estimates of how much it will cost.
