Hi ! They make thin wood planks just for this purpose , I know I have seen them online , I would think home depot or Lowes would carry them . But , I would think that using wood as a backsplash , might not be the best idea... I am sure it would look great , but it will absorb water and that might make it warp or get mold or mildew. It will also absorb odors and be difficult to clean grease off of them.
I do have a suggestion , they make peel and stick textured wood look vinyl planks, they cut easily , are pretty inexpensive , come in lots of colors/styles , & would be easy to clean. Good luck !!!!
I used bead board for a Designer show house, the individual boards. I painted with oil based primer and paint that complimented the granite. Looked amazing, homeowner still loves it.

There's also wood look tiles for a more durable backsplash. They're normally used for floors, but who's to say that they can't be used on walls?
There are tiles that look like wood planks, but you could also use toughened glass (easy to clean) with wood look wallpaper behind it.
