Depends on your budget and look. If you want the backsplash to stay, I would tile it. The peal and stick, I would think, wouldn't hold up as well as the tile.

the peel and stick may not hold up as well in a kitchen where there is heat and moisture but here are some ideas for you good luck!!
Check out lots of peel and stick tiles. Some are cheap and look cheap. Others cost more but look very nice. Obviously peel and stick is easier and faster. If you are going to use real tile check into putting adhesive mat on your wall first to eliminate the thin set. I have heard is works very well for backsplashes.
I think both can look nice. Peel and stick is easier but actual tile is not as hard as it looks. Home Depot runs clinics monthly that can actually give you all the instruction a newbie needs for a basic tile backsplash. Good luck!
Can you go in between? Use the real thing, but use the mussellbound adhesive to avoid mastic.
