I think collected together and displayed could be really cool. Do you have a game room? Or area like that? You could hang them in a vertical line on a narrow wall. Command hooks might do it.
Hi Diane, If they were mine I would decoupage memorable photos (photocopies, not originals) of my dad and family on both sides of them and then hang them on a wall as a photo display. Since the paddles are reversible the display could easily be changed up just by turning the paddles. But, that said, if you don't want to mess with them and because they're vintage and sentimental a display would also look nice just as they are.
How about using them as a huge compass decoration on a wall in your home labeled North/South/East/West?

I have also seen them painted orange, handles cut shorted and made into Halloween pumpkins.
You can add a little piece of wood across the middle and use them as shelves for a small photo… maybe if you and your dad !

you could make or buy a shadow box and mount one or two of the paddles in it and maybe a ping pong ball as well and if you have a photo or two of your dad playing ping pong add that it would be wall decor and a sweet memory to share with others
Think they would be cute in a sports wreath to hang on your front door.
You could add his monogram and birthday. If you have siblings, you could share them. If not, I'm thinking another option would be 12/3/6/9 for a clock.

How many paddles do you have?
If you have 12 (or can get enough for 12) my suggestion is to use them to make an oversized wall clock, either mounted directly on to the wall, or mounted on to a flat background. Here are some examples of oversized wall clocks made with other objects instead of numbers.
