I would not use pergo as when wet it warps. I'd use a ceramic tile or a granite tile. I personally have granite tile counter tops and love them.
Our house is from the 1950s. The kitchen has pale, yellow tiles that run from the floor up 1/2 of the wall all the way around. There is a black tile boarder on the times. If we wanted to remove them we would have had to tear the wall down to the studs and start fresh. My husband used marble-looking floor linoleum tiles and adhered them to the yellow part of the tiles. We wanted brown tones and couldn't have been happier with the result.

I, personally, wouldn't use Pergo on the countertops. I don't think they would hold up to the use that a counter would get. We have some Pergo on the floors, but as Joelle mentioned, you wouldn't want them getting very wet, or using knives, heat, etc. because of warping. We have one spot that had a little flood on the floor, and there is a minute lifted edge that we need to be careful of. The linoleum-type marble looking tiles used by Jodi would be much more durable.
We did ours with butcher block - it was very inexpensive and is durable. Don't do pergo - not food grade safe or water resistant.
Many many years ago, I had a coffee table that had seen better days. I covered the top of it with peel n stick vinyl floor tiles, that had a wood like look to it.
It improved the look of the table a lot, and I didn't have to worry about ring stains, scrapes, etc.
I once lived in a house with linoleum counters!
