Hello my son purchased a butcher block slab and applied it to his thrifted desk. The same thing might be done with a dresser.
Could be as simple at adding a countertop on top. A wider dresser may be best to be less tippy.

How To Turn An Old Dresser Into A Kitchen Island/Storage Piece
You've been given lots of examples but let me add that you want to consider the size of the dresser and its height. If you decide to add wheels, consider the size of them when figuring the height. Good luck with your project!
Yes, dressers are usually 29-30” H and kitchen counter top heights are usually 36”.
So, you can make a toe/kick base for it with 2x6’s, preferably either treated limber or painted all sides with exterior house paint (mopping kitchen floors-water wicks into toe kicks)
or you can go full steam pink and put 5” casters on it
or you can build the height on the top, with an open ended eggcrate configuration of 2x6’s- under the new top.
The new top needs to be scrubbable and non-porous.

Refinish your dresser to your liking. Add a new top to it with reclaimed or new wood and make one side larger to accomodate stools at one side or two ends. If you like the look of one open shelf remove one drawer, cut wood to make an open shelf where the drawer slides were and get baskets to fit inside. You can use an old flat finish door if you want one piece, you can get butcher block or attach planks to a piece of ply, stain and add trim on the sides so you can't see the two pieces (ply and wood on top). Home Depot will also cut laminate counter top to anysize you want and it isn't very expensive for a large piece.
Remove the mirror.
Change out the top or put a more durable material on it if it will be a high wear and tear area. Laminate is probably cheapest but I've seen some great prices of butcher block as well.
Swap out drawers if needed, changing some to open area.
You might want to change the ends to match your cabinets.
Paint or refinish with a highly durable finish.
Consider height, especially if you will be eating at it. You might want to change out the legs.
