Im having trouble picturing them. What are the measurements? What are they made of?

Probably vinyl, yes? I’ve seen people lay them up like lap siding as a backsplash. They used a construction adhesive like Liquid Nails, which dries yellow, so avoid using too much or find a mastic that dries clear.

If you decide to put them on the wall for a lap siding look you can use loctite power grab for adhesive. You will probably need to hold in place with painter's tape until it sets.
