If you posted a picture with your question, other Hometalkers would be more able to try to offer you some suggestions.
Basic option is to sand the laminate off (wearing a maskput a coat of primer on and then paint, decoupage, stencit, cover with ceramic tiles, whatever you choose!
Do you want to paint it?
You could tile the top if it's sturdy, or cover the top with pennies!
You could adhere a thin sheet of finish grade plywood, edge it and stain it.
You could wrap it in metal sheeting.
You could paint it for a farmhouse look or ad decoupage for something more fancy.
I wonder if you could put fabric and pictures on the table top and pour a bar top finish over it?
