Don't see why you couldn't. You will just have to attach it somehow. On the floor it is free floating. I used it on a small vertical area, and attached it with small brads.
Lots of laminated flooring can't take much water. If you want to do this behind your sink, make sure it is not just water resistant. It can still swell and lift. If you have an alternative, I'd choose that.
