Hi Suzanne. I use my old cards to make gift tags.
When my kids were still kids (they're now 42 and 37) I kept a box of odds and ends, including Christmas and other cards that they could cut up and use in making their own cards and other craft projects.
My mom used to make gift tags out of greeting cards. Since I am an antiquarian I realize that paper products have a value if saved long enough. since I have the room, I save mine in plastic shoe box things. If I particularly like an image, I just scan it into my computer.
